Preparation

  • Before use, clean with a dry cloth or brush, and run a small amount of dough through the rollers
  • Secure the machine firmly to your work surface with the clamp

Easy Recipe: The Basics of Handmade Pasta

For those who want to try it themselves, here’s a simple recipe you can make at home.

Ingredients (Serves 2)

  • Cake flour (low-protein flour): 100g
  • Bread flour (strong flour): 100g
  • Egg: 1 (about 50g)
  • Olive oil: 5g
  • Salt: a pinch
  • Water: up to 40ml (add gradually as needed)

Instructions

  1. Gently mix the ingredients with a fork without kneading.
  2. Bring the flour and liquid together by gently squeezing with your hands.
  3. If the dough feels too dry, add water little by little (up to 40ml).
  4. Once the surface becomes smooth, wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour to half a day.

Rolling and Cutting with a Pasta Machine

  1. Flatten the dough to about 1cm thick and feed it through the machine.
  2. Repeat the cycle: pass through the rollers → fold into thirds → dust with flour, until the dough becomes smooth.
  3. Adjust the knob one step at a time to gradually roll the dough thinner.
  4. Feed the sheet through the cutter to make Tagliatelle or Fettuccine.

Cooking

Boil in plenty of water for about 3–5 minutes.
